Muffins & Eggs

Ah, much better!  Day 2 was way less hectic than yesterday.  I didn't have class tonight so it definitely made a difference; I'll have to plan ahead on Mondays and Tuesdays.  Being proactive is key.


Blueberry corn muffin
Let me talk about the blueberry corn muffins for a second.  According to my husband, they were "the bomb," and they were pretty good. I was mostly fascinated that they came out of the muffin tin in one piece, instead of in pieces. Also, call me crazy, but there is something oddly beautiful when butter, sugar and corn meal are mixed together. I truly haven't lost it YET, but I did think that as I was making the muffins this morning.  Just wanted to share that deep thought with you....

We did the whole "breakfast for dinner" thing tonight in which I made Martha's scrambled eggs and fried eggs.  Truthfully, the scrambled eggs tasted like I had poured an entire container of salt into the pan.  My son wouldn't even eat them, and he loves eggs.  Hell, the dogs wouldn't even eat them which is not a good sign considering they love to eat stuff in the backyard, if you know what I'm saying.  So, I screwed up the scrambled eggs, but I'm proud to report that the fried eggs were delicious.  It's pretty difficult to screw up something cooked in bacon fat. 

                                                                       

Day 3 begins in a few hours, and I still don't know what I'm going to make.  Today was kind of an easy one so maybe tomorrow I'll push my limits a little bit....or maybe not.
