Coconut Cream Deliciousness


Coconut cream pie

Behold the most beautiful coconut cream pie ever baked!  Out of all of the things I have made so far, I am most proud of this pie.  It almost hurt me to cut into it because it was so pretty, and it was a labor of love, taking me almost 2 hours to make.  My friend Afiya was here to witness the pie's beauty and its deliciousness. 

I completed 3 recipes by making this pie: coconut cream pie filling, Martha's perfect pate brisee and swiss meringue for pies.  The pate brisee recipe (aka "pie crust")  made the best crust ever, and from now on, it'll be my go-to pie crust.  The swiss meringue was my first attempt at making meringue, and although it took a while for the meringue to form, it came out really well.  The recipe called for 7 egg whites so that's why it took so long for it to form.  I think I could win a contest with this pie, for real!
